  • 1/4 cup lemon juice

Instructions:
  1. Prepare the Jars: Wash jars and lids in hot, soapy water and rinse well. Sterilize them by placing in a large pot of boiling water for 10 minutes. Keep the jars and lids in hot water until ready to use.
     
  2. Prepare the Blueberries: If using fresh blueberries, rinse them under cold water and remove any stems or leaves. If using frozen blueberries, there’s no need to thaw them before cooking.
     
  3. Cook the Blueberries: In a large, heavy-bottomed pot, combine the blueberries and lemon juice. Crush the blueberries slightly with a potato masher or the back of a spoon to release their juices. Add the pectin and stir to combine.
     
  4. Bring to a Boil: Over high heat, bring the blueberry mixture to a full rolling boil, stirring constantly. A rolling boil is one that cannot be stirred down.
     
  5. Add the Sugar: Add the granulated sugar all at once, stirring constantly. If using, add the butter to reduce foaming. Return the mixture to a full rolling boil and boil hard for 1 minute, stirring constantly.
     
  6. Check for Setting Point: To check if the jam has reached its setting point, place a small amount on a cold plate and let it cool for a minute. If it wrinkles when pushed with your finger, it’s ready. If not, continue boiling for another minute and test again.
     
  7. Remove from Heat: Remove the pot from heat and skim off any foam with a metal spoon.
     
  8. Fill the Jars: Ladle the hot jam into the sterilized jars, leaving about 1/4 inch headspace at the top. Wipe the rims of the jars with a clean, damp cloth to remove any residue. Place the lids on the jars and screw on the bands until fingertip tight.
     
  9. Process the Jars: Place the filled jars in a boiling water canner, making sure they are covered by at least 1 inch of water. Process for 10 minutes (adjust for altitude if necessary). Remove the jars from the water and let them cool completely on a towel or rack.
     
  10. Check Seals and Store: Once the jars are cool, check the seals by pressing down on the center of each lid. If it doesn’t pop back, the jar is sealed. Store the sealed jars in a cool, dark place for up to one year. Refrigerate any unsealed jars and use within a few weeks.
