  • 1 cup grated mozzarella or other gluten-free cheese
  • 1/2 cup refried beans (ensure they’re gluten-free)
  • 1/2 cup finely chopped onions
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

For serving:

  • Gluten-free curtido (Salvadoran pickled cabbage)
  • Gluten-free salsa roja (Salvadoran tomato sauce)

The Steps to Gluten-Free Deliciousness

  1. Prepare the Dough

In a large mixing bowl, combine the gluten-free masa harina with warm water and a pinch of salt. Mix until a soft, pliable dough forms. If the dough feels too dry, add a little more water. Knead until smooth, then cover the bowl with a damp cloth and let it rest while you prepare the filling.
