Instructions
  1. Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and set aside.
  2. Make the Sauce: In a small bowl, mix together the soy sauce, tamarind paste, brown sugar, vegetarian fish sauce (if using), and chili sauce. Adjust to taste.
  3. Cook the Tofu: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the pan and set aside.
