Ingredients You’ll Need

  • 2 cups masa harina (corn flour, such as Maseca)
  • 1 1/2 cups warm water
  • 1 cup shredded mozzarella cheese (or a blend of your favorite melting cheeses)
  • Salt to taste
  • Optional: Refried beans or cooked pork (for additional filling options)

Step-by-Step Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the masa harina and warm water. Mix until the dough is smooth and slightly sticky. If the dough is too dry, add a little more water, one tablespoon at a time. Season with a pinch of salt.
  2. Divide the Dough: Divide the dough into 8 equal portions. Roll each portion into a ball.
  3. Fill the Pupusas:
    • Take one dough ball and flatten it into a small disc with your hands.
    • Place about 1-2 tablespoons of shredded cheese (and optional fillings like refried beans or cooked pork) in the center.
    • Carefully fold the edges of the dough over the filling to encase it, then gently flatten it back into a disc, about 1/4 inch thick. Repeat with the remaining dough balls.
  4. Cook the Pupusas:
    • Heat a non-stick skillet or griddle over medium heat.
    • Place the pupusas on the hot skillet and cook for about 3-4 minutes on each side, or until they are golden brown and slightly crispy. The cheese might ooze out a bit, which is perfectly fine and delicious.
  5. Serve and Enjoy: Serve your pupusas hot, ideally with a side of curtido (pickled cabbage slaw) and salsa roja. Enjoy this delicious taste of Salvadoran comfort food!

Tips for Perfect Pupusas

  • Keep Your Hands Wet: If the dough sticks to your hands while shaping the pupusas, keep a small bowl of water nearby to dip your fingers in.
  • Don’t Overfill: Be careful not to overfill the pupusas, as this can make them difficult to seal.
  • Use a Light Touch: When flattening the filled pupusas, use a gentle touch to avoid tearing the dough.

Final Thoughts

Making pupusas at home can be incredibly easy with just a few ingredients. This simple recipe allows you to enjoy the authentic flavors of Salvadoran cuisine without any hassle. Give it a try and savor the deliciousness of homemade pupusas!
