Apple Salad: A Refreshing and Nutritious Dish

Apple salad is a delightful mix of fresh flavors and textures that is both refreshing and nutritious. This vibrant salad combines crisp apple slices with mixed greens, crunchy walnuts, and a tangy balsamic vinaigrette, making it a perfect addition to any meal. Ingredients:

  • 2 medium apples (Honeycrisp or Gala work well)
  • 4 cups mixed greens (spinach, arugula, and baby kale)
  • 1/2 cup walnuts, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare the Apples:
    Begin by washing the apples thoroughly under running water. Honeycrisp and Gala apples are excellent choices for their sweet flavor and crisp texture. Cut the apples into quarters, remove the cores, and slice them thinly. To prevent the apple slices from browning, you can toss them in a bit of lemon juice, but this step is optional.
     
  2. Toast the Walnuts:
    Toasting the walnuts enhances their flavor and adds a satisfying crunch to the salad. In a small skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently, until they are golden brown and fragrant. Remove from the heat and let them cool.
     
  3. Make the Dressing:
    In a small bowl, whisk together the balsamic vinegar, extra-virgin olive oil, honey, Dijon mustard, salt, and pepper until well combined. The honey adds a touch of sweetness that balances the tangy balsamic vinegar, while the mustard helps to emulsify the dressing.
     
  4. Assemble the Salad:
    In a large salad bowl, combine the mixed greens, toasted walnuts, dried cranberries, crumbled feta cheese, and thinly sliced red onion. Add the apple slices to the bowl. The combination of fresh greens, crunchy nuts, chewy cranberries, and creamy feta creates a delightful mix of textures and flavors.
     
  5. Dress the Salad:
    Drizzle the balsamic vinaigrette over the salad. Start with half of the dressing, toss the salad to combine, and then add more dressing as needed to ensure everything is well coated but not overly dressed. The vinaigrette ties all the components together with its tangy and slightly sweet flavor.
     
  6. Serve and Enjoy:
    Serve the apple salad immediately to ensure the greens remain crisp and fresh. This salad makes a wonderful side dish for grilled chicken or fish, but it can also stand alone as a light and healthy main course. The balance of flavors and textures makes each bite a delightful experience.
