Banana Pancakes: A Naturally Sweet Breakfast Delight

Banana pancakes are a delightful twist on traditional pancakes, offering natural sweetness and a hint of banana flavor. These pancakes are light, fluffy, and perfect for a weekend breakfast or brunch. Adding mashed bananas to the batter not only enhances the flavor but also adds moisture, making each bite irresistibly delicious.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • Optional: maple syrup, butter, or fresh fruit for serving

Instructions:

  1. Prepare the Dry Ingredients:
    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. This dry mixture forms the base of your pancake batter, ensuring that the pancakes rise beautifully and have a light texture.
     
  2. Mix the Wet Ingredients:
    In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined. Stir in the mashed bananas, making sure they are evenly distributed throughout the wet mixture. The ripe bananas add natural sweetness and a delightful banana flavor to the pancakes.
     
  3. Combine Wet and Dry Ingredients:
    Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; it’s okay if the batter is a bit lumpy. Be careful not to overmix, as this can result in dense pancakes.
     
  4. Cook the Pancakes:
    Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with a bit of butter or cooking spray. For each pancake, pour about 1/4 cup of batter onto the griddle. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes. Flip the pancake and cook for an additional 2-3 minutes, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.
     
  5. Serve and Enjoy:
    Serve the banana pancakes warm, stacked on a plate. Top with a drizzle of maple syrup, a pat of butter, or fresh fruit for a delicious and satisfying breakfast. The combination of fluffy pancakes and sweet bananas makes for a perfect start to the day.
