How to Make Delicious Low-Carb Pupusas

Ingredients You’ll Need

For the dough:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil

For the filling:

  • 1 cup grated mozzarella or low-carb cheese of your choice
  • 1/2 cup cooked and mashed cauliflower (a great low-carb alternative to beans)
  • 1/2 cup finely chopped onions
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For serving:

  • Low-carb curtido (Salvadoran pickled cabbage)
  • Low-carb salsa roja (Salvadoran tomato sauce)

Making Your Low-Carb Pupusas

  1. Prepare the Dough

In a large mixing bowl, combine the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well. Add the warm water and olive oil, stirring until a dough forms. The psyllium husk will help bind the ingredients together, mimicking the texture of traditional masa. Knead the dough for a few minutes until smooth, then let it rest for about 10 minutes to allow the psyllium husk to fully absorb the liquid.

  1. Prepare the Filling

Heat olive oil in a skillet over medium heat. Add the chopped onions and minced garlic, sautéing until they’re soft and fragrant. Stir in the mashed cauliflower and season with salt and pepper. Cook for a few more minutes until the flavors meld together. Remove from heat and let it cool slightly. Once cooled, mix in the grated cheese. This combination will serve as the savory filling for your pupusas.

  1. Shape the Pupusas

Divide the dough into 8 equal portions and roll them into balls. Flatten each ball into a thick disc, about 4 inches in diameter. Place a spoonful of the cauliflower and cheese filling in the center of each disc. Carefully fold the edges of the dough over the filling, sealing it inside. Gently flatten the stuffed ball back into a disc, making sure the filling doesn’t spill out.

  1. Cook the Pupusas

Heat a non-stick skillet or griddle over medium-high heat. Cook the pupusas for about 3-4 minutes on each side until they are golden brown and crispy. The goal is a beautifully toasted exterior with a gooey, savory center.

  1. Serve and Enjoy

Serve your low-carb pupusas with a generous portion of low-carb curtido and a drizzle of low-carb salsa roja. The tangy curtido and flavorful salsa perfectly complement the cheesy, cauliflower filling of the pupusas.
