How to Make Pupusas de Loroco: Plus Substitutes for the Elusive Flower

Pupusas de loroco are a delightful variation of the traditional Salvadoran pupusa, combining the tantalizing flavors of cheese with the unique, floral notes of loroco, an edible flower native to Central America. If you’re curious to try this exotic treat but can’t find loroco, don’t worry! I’ve got you covered with some tasty alternatives as well.

Ingredients You’ll Need:

  • 2 cups of masa harina (corn flour)
  • 1½ cups of warm water (adjust as necessary)
  • 1 teaspoon of salt
  • 1 cup of shredded quesillo (or mozzarella if quesillo is unavailable)
  • ½ cup of fresh or preserved loroco (or a suitable substitute)
  • Vegetable oil (for greasing the skillet)

Step-by-Step Guide:

Step 1: Prepare the Masa

In a large bowl, mix the masa harina with salt. Gradually add warm water and knead until the dough is smooth and pliable. It should feel soft and not sticky. Adjust the masa harina or water as needed to achieve the right consistency.

Step 2: Prepare the Filling

Combine the shredded cheese with loroco in a bowl. If using a substitute for loroco, prepare it as described below before mixing it with the cheese.

Step 3: Shape the Pupusas

Take a golf-ball-sized portion of masa dough and roll it into a ball. Flatten it between your palms to create a small disc. Place a spoonful of the cheese and loroco (or substitute) mixture in the center of the disc. Carefully fold the edges of the masa over the filling, sealing it inside. Gently flatten the filled ball into a disc about ¼ inch thick, making sure the filling stays enclosed.

Step 4: Cook the Pupusas

Heat your griddle or skillet over medium heat and lightly grease it with vegetable oil. Place the pupusas on the griddle and cook for about 4-5 minutes on each side, or until they are golden brown and slightly puffed.

Step 5: Serve with Curtido and Salsa

Serve your pupusas de loroco hot, accompanied by curtido (a spicy cabbage slaw) and a simple Salvadoran tomato salsa. These sides complement the rich and floral flavors of the pupusas.

Loroco Substitutes:

If you can’t find loroco, here are a few substitutes that can mimic its mild, herbaceous flavor:

  • Broccoli Florets: Finely chopped, lightly steamed broccoli florets can mimic the texture and have a gentle, green flavor.
  • Baby Spinach: A more readily available substitute, baby spinach offers a mild flavor when lightly sautéed with garlic.
  • Zucchini Blossoms: If available, zucchini blossoms are an excellent substitute, providing a similar floral note.
  • Green Beans: Finely chopped and lightly sautéed, green beans offer a crunch and freshness similar to loroco.
