Ingredients

For the Dough:

  • 1 ½ cups quinoa flour
  • ½ cup masa harina (or rice flour if going fully gluten-free)
  • ½ tsp salt
  • ¾ to 1 cup warm water
  • Optional: 1 tbsp olive oil
  • Optional: 1 tbsp flax meal or psyllium husk (for better binding)

For the Filling:

  • Cheese + spinach
  • Black beans + garlic + cheese
  • Roasted veggies + feta
  • Plant-based cheese + mushrooms
  • Sweet version: banana + almond butter + cinnamon

Step 1: Make the Dough

In a large bowl:

  1. Mix quinoa flour, masa harina, salt, and optional flax or psyllium.
  2. Add warm water gradually and knead into a soft, cohesive dough.
  3. If crumbly, add a bit more water or oil. If sticky, add a spoonful of quinoa flour.

Step 2: Prepare the Filling

Step 3: Shape and Fill the Pupusas

  1. Divide dough into 8–10 balls.
  2. Flatten each into a disc in your palm.
  3. Add 1–2 tablespoons of filling in the center.
  4. Fold edges over the filling and seal.
  5. Gently flatten into a thick disc (½ inch).
