Ingredients You’ll Need

For the Dough:

  • 2 cups masa harina (corn flour, such as Maseca)
  • 1 1/2 cups warm water
  • Salt to taste

For the Fillings:

  • 1 cup shredded mozzarella cheese (or a blend of your favorite melting cheeses)
  • 1/2 cup refried beans
  • 1/2 cup cooked and crumbled chorizo or ground beef
  • 1/2 cup chopped cooked bacon
  • 1/2 cup chopped cooked chicken
  • 1/4 cup finely chopped jalapeños (optional for a spicy kick)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sautéed mushrooms
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions

Step-by-Step Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the masa harina and warm water. Mix until the dough is smooth and slightly sticky. If the dough is too dry, add a little more water, one tablespoon at a time. Season with a pinch of salt.
  2. Divide the Dough: Divide the dough into 8 equal portions. Roll each portion into a ball.
  3. Prepare the Fillings: In small bowls, have your cheese, refried beans, chorizo (or ground beef), bacon, chicken, jalapeños, cilantro, mushrooms, bell peppers, and onions ready.
  4. Assemble the Pupusas Locas:
    • Take one dough ball and flatten it into a small disc with your hands.
    • Add a little bit of each filling (cheese, beans, chorizo, bacon, chicken, jalapeños, cilantro, mushrooms, bell peppers, and onions) to the center. Be careful not to overfill.
    • Carefully fold the edges of the dough over the filling to encase it, then gently flatten it back into a disc, about 1/4 inch thick. Repeat with the remaining dough balls.
  5. Cook the Pupusas:
    • Heat a non-stick skillet or griddle over medium heat.
    • Place the pupusas on the hot skillet and cook for about 3-4 minutes on each side, or until they are golden brown and slightly crispy. The cheese might ooze out a bit, which is perfectly fine and delicious.
  6. Serve and Enjoy: Serve your pupusas locas hot, ideally with a side of curtido (pickled cabbage slaw) and salsa roja. Enjoy the explosion of flavors in each bite!

Tips for Perfect Pupusas Locas

  • Keep Your Hands Wet: If the dough sticks to your hands while shaping the pupusas, keep a small bowl of water nearby to dip your fingers in.
  • Don’t Overfill: Be careful not to overfill the pupusas, as this can make them difficult to seal and cook properly.
  • Use a Light Touch: When flattening the filled pupusas, use a gentle touch to avoid tearing the dough.

Final Thoughts

Making pupusas locas at home is a fun and delicious way to enjoy a variety of flavors all in one bite. With this simple recipe and your favorite fillings, you can create a memorable meal that’s sure to impress. Get creative with your fillings and enjoy the crazy deliciousness of pupusas locas!
