Apple Pie: The Classic Comfort Dessert

Apple pie is the epitome of comfort desserts, conjuring images of family gatherings, holidays, and the warm, inviting aroma that fills the kitchen as it bakes. This recipe combines the classic flavors of tender, spiced apples with a flaky, buttery crust, making it a favorite for any occasion.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and cut into small pieces
  • 1/4 to 1/2 cup ice water
  • 6 medium apples (Granny Smith and Honeycrisp work well)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Make the Pie Crust:
    In a large bowl, whisk together the flour, salt, and granulated sugar. Add the chilled, cut-up butter. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs with some larger pieces. Gradually add the ice water, starting with 1/4 cup and adding more as needed, until the dough just comes together. It should be moist but not wet or sticky. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least an hour.
     
  2. Prepare the Apples:
    While the dough chills, preheat your oven to 425°F (220°C). Peel, core, and slice the apples into 1/4-inch thick slices. Granny Smith and Honeycrisp apples are ideal as they hold their shape well and provide a perfect balance of tart and sweet flavors. In a large bowl, combine the apple slices with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, flour, and lemon juice. Toss until the apples are evenly coated.
     
  3. Roll Out the Dough:
    On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate, leaving some overhang. Carefully transfer the dough to the pie plate and gently press it into the bottom and up the sides. Roll out the second disk of dough for the top crust. For a lattice crust, cut the dough into strips; otherwise, leave it whole.
     
  4. Assemble the Pie:
    Pour the apple mixture into the prepared crust, spreading it out evenly. Dot the filling with the small pieces of butter. If making a lattice crust, weave the strips over the filling, or place the whole rolled-out dough on top and cut a few slits to allow steam to escape. Trim and crimp the edges to seal.
     
  5. Bake the Pie:
    Brush the top crust with the beaten egg to give it a beautiful golden color as it bakes. Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 20 minutes. Reduce the oven temperature to 375°F (190°C) and continue baking for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges of the crust brown too quickly, cover them with foil.
     
  6. Cool and Serve:
    Allow the pie to cool on a wire rack for at least 2 hours before serving. This cooling time helps the filling set and makes slicing easier. Serve warm or at room temperature, possibly with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
